Paleo Winter Jewel Guacamole

Avocados and pomegranate seeds sounds like a pretty weird combination I know – but just wait ’til you taste the amazing mash-up of flavors in this easy paleo guacamole recipe!

This dairy-free guacamole recipe is compliments of my great friend Roxy. She tried it for the first time at a local restaurant and loved it so much she went home and came up with her own version.

Who knew adding pomegranate to a guacamole could give it such an exciting new spin! When you dip into this one you’ll notice a definite tanginess from the pomegranate seeds along with the smooth spiciness of the guacamole. Delicious!

This one’s a real beauty inside and out. Early winter is the peak season for pomegranates, or “the jewel of winter” as some call them – and those luscious ruby-red seeds make for a beautiful presentation folded into this guacamole. Plus, you’re getting a ton of healthy omega-3 fatty acids from the avocados…not to mention all those antioxidants loaded into the pomegranate. This guacamole-pomegranate goes with just about anything. Serve it on the side with Mexican food or how about with spicy and sweet chicken wings…mmm. Or just enjoy it as a snack with your favorite fresh-cut veggies.

If you’ve already skipped ahead and noticed this recipe calls for 2 jalapeños, not to worry. They’re not super-hot once they’re sliced and seeded. They give the guacamole a nice bite, but don’t overwhelm all the other wonderful flavors. If adding two peppers makes you nervous, just add one jalapeño then give the guac a taste and see if it’s spicy enough for you. This paleo recipe makes it simple to adjust the heat and flavors to suit your own personal taste.

Paleo Guacamole with Pomegranate Recipe

Yield: Serves about 4

Paleo Guacamole with Pomegranate Recipe

Ingredients

  • 4 avocados, mashed
  • Seeds from 1 pomegranate
  • 2 jalapenos, diced small
  • 1/4 cup red onion, diced small
  • 1 or 2 cloves of garlic, minced
  • 1 to 1-1/2 limes, juiced
  • Salt and pepper to taste
  • 1/4 cup cilantro (leaves only) chopped

Instructions

  1. Halve and pit avocados, scoop out flesh, then mash together in mixing bowl – leaving slightly chunky
  2. Stir in remaining ingredients, folding in pomegranate seeds last
  3. Serve as dip for your favorite veggies or gluten-free chips
  4. Seal and refrigerate any leftovers – the lime juice should help keep the guacamole green and fresh for another day or two

  1. this is the same guacamole I had at Mercadito in NYC. My favorite I have made this many times and I love it every time. Another great add in is bits of orange.. I love how it just brightens it up even more.
