Paleo Chocolate Banana Mousse

The idea for this one came from a Facebook post paleo guru Robb Wolf put up a couple of weeks ago. He was out at a restaurant and commented on how awesome the food was, including his cashew chocolate dessert. Naturally, that got me thinking…

I’ve worked with cashews before as a cheese substitute in my paleo lasagna recipe. That dish was so good, I was eager to try out the sweet side of water-soaked cashews to see what I could come up with.

This chocolate banana mousse is the result. It’s really very simple and takes just minutes to prepare. Plus it’s gluten-free, diary-free and contains no refined sugars – just make sure you soak your cashews in water for about 8 hours before mixing this one up in your blender. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2xamjt’]

I admit I was hesitant to attempt this one at first. I’m a chocolate mousse lover from way back and I wanted my new paleo version to be really yummy. I added a ripe banana for a little change to the traditional deep chocolate flavor. I think it turned out awesome. My hubby sliced a few bananas and added them into his little cup of creamy chocolate delight.

You won’t believe this delicious mousse is made with cashews, cocoa powder and banana…it tastes that good!

You gotta try this one. It’s simple, elegant, and I bet it will be one of your favorite paleo treats for sure!

Paleo Chocolate Banana Mousse Recipe

Ingredients

  • 2 cups of raw cashews – soak in water overnight
  • 1/2 cup + 2 tbs of either almond milk or full-fat coconut milk
  • 1/4 cup of raw honey
  • 6 tbs of cocoa powder
  • 1 ripe banana
  • 1 tsp cinnamon
  • Pinch of salt

Instructions

  1. In a heavy duty blender -- we used our Ninja Professional Blender -- or a food processor, combine all the above ingredients
  2. Mixing Tip: Add the cocoa powder first, and pour everything else on top of it so the powder doesn't stick to the sides of your blender
  3. Blend until well-mixed
  4. Refrigerate mousse for about 1 hour to set
  5. Spoon into serving bowls, top with banana slices or other fruit if desired, and enjoy
