I’ve worked with cashews before as a cheese substitute in my paleo lasagna recipe. That dish was so good, I was eager to try out the sweet side of water-soaked cashews to see what I could come up with.
This chocolate banana mousse is the result. It’s really very simple and takes just minutes to prepare. Plus it’s gluten-free, diary-free and contains no refined sugars – just make sure you soak your cashews in water for about 8 hours before mixing this one up in your blender.
I admit I was hesitant to attempt this one at first. I’m a chocolate mousse lover from way back and I wanted my new paleo version to be really yummy. I added a ripe banana for a little change to the traditional deep chocolate flavor. I think it turned out awesome. My hubby sliced a few bananas and added them into his little cup of creamy chocolate delight.
