Paleo BLT Party Platter Bites

Who doesn’t love a BLT, right? Well here’s the mini version – all that fresh and smoky BLT flavor you love shrunk down to healthy little paleo bites.

whole30 compliant recipe markIf you’re looking for a paleo appetizer for your next party, this one’s a winner. Your guests will be amazed when they see a platter full of these colorful beauties rolling their way. Everybody will have to try at least one…and usually many more. (In fact, it’s a really smart idea to at least double this recipe…the first time I brought these to a party they were gone in like a minute…yikes!)

These paleo BLT bites are really easy to make, but do keep in mind everything’s teeny-tiny. If you’re like me, it may take a little more patience than normal to get these cherry tomatoes filled and plated.

I started by cutting a thin layer off the top of each tomato, then I used my pinky finger to scoop out the pulp and seeds. Sorry if that sounds a little gross, but if you’re a mom you know it’s really no big deal. Finally, I set the hollowed-out tomatoes upside down on a paper towel to let them drain while I made the BLT filling. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-ppim88′]

Once filled, these top-heavy tomatoes won’t want to sit up perfectly for you. I solved this problem by lining them up touching each other, and then slipped thin slices of avocado behind each row for extra support. I think my reinforcements looked kinda cool (you can see them in the photo above), and besides, who wouldn’t want a little avocado to go with their BLT?

These definitely taste best chilled…so give yourself enough time to get them good and cold before plating and serving them.

And one last piece of advice – you will make a mess when putting these together. So I’d suggest you just get them stuffed and in the fridge without worrying about how they look. Then when they’re chilled and ready to serve, you can easily wipe off any extra mayo from the tomatoes with a damp paper towel as you line them up on your party platter.

Yield: About 2 dozen

Paleo BLT Party Platter Bites

Ingredients

  • 1 pint cherry tomatoes (larger size cherry tomatoes work best)
  • 6 slices bacon, cooked and crumbled
  • 1/3 cup of mayo (paleo or similar)
  • 1/3 cup chopped green onions
  • 2 Tbsp fresh parsley, finely chopped
  • Salt and pepper to taste

Instructions

  1. Cut the top off each cherry tomato
  2. Scoop out and discard pulp
  3. Invert tomatoes on a paper towel to drain
  4. In a small bowl, combine all the filling ingredients above and mix well
  5. Spoon BLT mixture into each tomato
  6. Place filled tomatoes on a party tray – refrigerate before serving!
