Paleo Berrylicious Creamsicles

There’s nothing better on a sweltering summer day than biting into a cool and creamy frozen fruit bar you’ve made yourself in minutes – no ice cream maker required!

This quick and easy paleo, gluten-free and non-dairy recipe is guaranteed to bring out the kid in everyone…all without chasing down the ice cream truck.

And best of all, there’s not a drop of high fructose corn syrup, artificial flavorings, or other weird chemicals like food dyes in these.

Just 4 pure, wholesome ingredients go into this “berrylicious” paleo treat: fresh (or frozen) berries, coconut milk, a little raw honey, and a dash of vanilla.

Needless to say, if you’ve got young ones at home they will go nuts for these. And it’s a feel-good for you too knowing these fruit bars are all-natural, and you even have full control of the sugar content! 

So, let’s start with the berries. I used about a cup of thawed pre-packaged mixed berries (Trader Joe’s frozen organic to be exact). Fresh organic berries roughly chopped up would be excellent too.

Next you simply toss the fruit into a blender and pulse it a few times…you don’t want a purée, just roughly bladed into smaller pieces will do the trick.

Set the blended fruit aside and whip the coconut milk, vanilla and some honey together in the blender. Put more or less honey in these to suit your taste. If your fruit is really sweet, you could easily skip the honey.

Finally stir the blended berries and coconut milk mixture together and pour into your popsicle molds. Now if you want some bigger chunks of fruit nestled inside, stuff some fatter pieces into the molds first, then pour the blended fruit and coconut mixture in. And by the way, if you don’t have ice pop molds, you could also use small plastic cups and popsicle sticks.

The hardest part about this paleo recipe is waiting for these fruit bars to freeze…give ’em a couple of hours or so. Then bust those berrylicious fruit bars out of their plastic molds by running them under a little warm water.

Yield: 6-8 fruit creamsicles

  • 1 can full fat coconut milk (13.5 oz)
  • 1 generous cup of unsweetened chopped mixed berries (I used Trader Joe's frozen Organic Mixed Berry Blend which is strawberries, blackberries, blueberries and raspberries)
  • 2 tbs up to 1/4 cup raw honey, adjust to taste
  • 1 tsp pure vanilla extract
  • Optional – some additional larger chopped fruit pieces


  1. In a blender or food processor, lightly pulse mixed fruit. Empty into a medium bowl
  2. Next mix the coconut milk, honey and vanilla in a blender. Add to bowl with fruit (see above) and stir to mix
  3. Optional – add a few larger pieces of chopped fruit to each ice pop/popsicle mold before adding mixture
  4. Pour blended fruit/coconut milk mixture into popsicle molds
  5. Insert handles, allow to freeze for 2-3 hours, and serve!
