Paleo Apple-Bacon Muffins

This easy little paleo recipe combines two of my favorite savory and sweet flavors in a hot-out-of-the-oven breakfast treat.

I got the idea for this bacon-apple muffin when my friend was broadcasting on Periscope from Taste of Paleo in California. He was walking along the row of vendor booths and came across one selling paleo apple-bacon granola. He zoomed in on the sample jar – and there was nothing left but crumbs. No surprise there…bet that granola was awesome!

I’m inspired to create recipes from random moments like this. Sometimes it’s a friends lunch, a recipe in magazine or just browsing the shelves at Whole Foods. You never know what will spark an idea – even an empty jar of granola.

So I thought why not try to combine bacon and apples in a breakfast muffin!

These in my opinion are the perfect match of salty and slightly sweet. And the added fall spices just enhance the flavors even more.

These little gems are such a fun treat. I love the cinnamon in the mix and that hint of smokey goodness from the bacon. This is one really worth making when you’re hungry for something a little different.

Paleo Apple-Bacon Muffins Recipe

Yield: Makes about 12-14 muffins

Paleo Apple-Bacon Muffins Recipe


    Wet Ingredients
  • 4 eggs, whisked
  • 1/4 cup unsweetened applesauce
  • 1/3 cup pure maple syrup
  • 1/3 cup coconut oil
  • 1 tsp vanilla
  • Dry Ingredients
  • 1 3/4 cups almond flour
  • 2 Tbsp coconut flour
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1 Tbsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp ground nutmeg
  • Plus:
  • 6 slices of pre-cooked bacon
  • 1 apple, peeled, cored and chopped small


  1. Preheat oven to 350º F
  2. In a medium mixing bowl, combine all wet ingredients above
  3. In a separate mixing bowl, stir together all the dry ingredients above
  4. Pour the wet ingredients into the dry ingredients bowl and stir well
  5. Crumble 4 of the 6 precooked bacon slices, and lightly fold into the mix
  6. Next add the chopped apples slices and lightly fold in
  7. Pour muffin mix into paper muffin cups or silicone cups
  8. Crumble remaining 2 slices of bacon and lightly place on top of muffins
  9. Bake muffins 15-17 minutes, or until inserted toothpick comes out clean
  10. Allow to cool and enjoy!

    I would like to know if I can substitute the almond flour with all coconut flour or tapioca flour. Would like to make this for my daughters lunch.
