Paleo Adobo Bacon Burger with Spicy Aioli Sauce

Say goodbye to boring paleo burgers with this gourmet recipe! Takes a little extra prep time, but its hot-off-the-grill, crazy-good taste makes it so worth it!

whole30 compliant recipe markThe inspiration for this juicy paleo burger comes from a restaurant here in Phoenix called the Sandbar Mexican Grill.

Hubby and I like to hit this one when the desert temps here have cooled down enough to enjoy sitting outside. The Sandbar is a casual place, where you’ll get imported sand between your toes as you stroll up to one of their high-top tables cleverly made from a surfboard.

How could you not have fun at a place like this? Music, sun, and a laid-back atmosphere. It’s a great place to grab a bite, watch some sports, and soak up the sunshine.

Our favorite item on their menu is the Jalapeno Burger, served paleo-style. I’ve tried begging waiters for the recipe, but I guess they’re sworn to secrecy. I finally gave up and decided I’d have to figure out what’s in this yummy burger all by myself.

I’ve got to tell you, my version is pretty darn close to the Sandbar’s. Kinda proud of myself actually for breaking this burger’s code.

Of course, I couldn’t leave the original well enough alone, so I added some crumbled bacon to the patty to kick it up a notch, and I came up with a rich, mayo-style aioli topping to go with it.

If you like a little spice with your burger, this is the paleo recipe to try. It’s not five-alarm over the top, but it has just enough heat to raise your eyebrows and warm your taste buds. I think you’re really going to like this burger’s savory, smokey flavor…followed by the coolness of the avocado and aioli sauce. Delish!

With all that good stuff, who needs a bun? Not me. Not you. Gotta save room for those sweet potato fries!

Adobo Bacon Burger with Spicy Aioli Sauce Recipe

Forget boring paleo burgers…this one is a gourmet pattie, grilled to plump and juicy perfection, and served with an easy adobo sauce.
Servings 4

Ingredients
  

Burger

  • 1 1/2 lbs ground grass-fed beef or free range turkey
  • 2 tsp of smoked paprika
  • 1 tbsp of minced chipotle and adobo most well-stocked grocers carry small cans of chipotle peppers in an adobo sauce
  • 1 tsp salt
  • 6-8 cooked or fried bacon slices chopped
  • 1 whole white onion
  • Optional garnish: 2 avocados sliced

Aioli Topping

  • 2/3 cup avocado oil or extra virgin olive oil
  • 1 raw egg pasteurized recommended for safety
  • 1 1/2 tbsp Dijon mustard
  • 1 tbsp heaping of minced chipotle and adobo sauce

Instructions
 

Aioli Instructions

  • Put the avocado oil, egg, mustard, and minced chipotle-adobo sauce in a tall container and mix with a hand immersion blender on high speed to emulsify. (You may also be able to do this with a stand mixer or blender – mix until sauce thickens). Refrigerate until ready to use

Burger Instructions

  • Fry or cook bacon slices, and set aside
  • Sauté 1 whole onion on medium-low heat in a saucepan with a couple of tablespoons of olive oil
  • In a bowl, mix together the raw ground beef (or turkey) with the chopped bacon, spices and minced chipotle-adobo
  • Gently form into patties for grilling
  • Preheat BBQ grill – set to medium- to medium-high heat
  • Cook patties about 5-6 minutes per side, or until they’re cooked through how you like them
  • Top cooked burgers with the caramelized onions, some aioli sauce, and avocado slices
  • Try serving with sweet potato fries on the side
  • Enjoy!

  1. Hi there. This sounds amazing, but am I missing something? After step 2, it doesn’t mention what to do with the bacon. Do you chop it up and add it to the ground beef mix in step 4?

    1. Hi Sarah – good catch! You’re exactly right, just mix the pre-cooked bacon into the meat. We’ll fix the recipe to reflect that. Enjoy the burgers!

  6. Sounds great but is the jalapeno burger? I don’t see jalapenos in the ingredients.

    1. Interesting question. That’s where they got me. It was on top of the burger with the onions, but I didn’t see or taste it In the burger. So I just went with my own version of a smokey burger. I’m sure you could put some peppers in there, but watch your adobo seasoning. Unless you want it really hot. :
