Orange-Maple Sweet Potatoes in Orange Cups

And now for something completely different…an Emeril Lagasse special holiday recipe made paleo and dairy-free for my paleo peeps! 

I’ve got to give full credit to the “kick it up a notch” celebrity chef for coming up with this novel and elegant way to serve what may be some of the best whipped sweet potatoes you’ve ever tasted!

My hubby actually stumbled across Emeril’s original recipe, but he thought there was no way I could make this one paleo.

Well I love a challenge – and whipped sweet potatoes! – so I went to work on it. I’ve got to confess, it wasn’t all that hard to change this one around to a much healthier paleo and dairy-free version while keeping all its great spicy fall flavors.

These paleo sweet potato orange cups are really simple! The only real challenge is getting the fruit and pulp out of the orange shells. (And remember to save the fruit for the orange juice you’ll need for this recipe!)

I can see how this dish could easily start a new Thanksgiving tradition at your house. I’m sure people will “ohhh” and “ahhh” when you serve these sweet potato cups hot out of the oven. (I’m planning to make these for my boys when they come home for the holidays – I know they’ll love them!)

When these cups are baking in the oven, they’ll literally fill every corner of your home with the aroma of orange and cinnamon…and make you want to dive into these even more!

These are so amazing, your guests won’t even care that they’re paleo and gluten-free.

Serve these and the only downside is your guests will expect these to be on your holiday table every year!

All you do is scoop the whipped sweet potatoes mixture into the empty orange cups and they’re ready to slide into the oven for about 20 minutes!

This is a really simple recipe, and honestly, the most difficult thing about it is hollowing out the oranges.

Yep, you’ve got to scoop out all the fruit (which you’ll use to make the juice) right down to the rind…otherwise the juice would seep into the sweet potatoes and make them pretty soggy.

If however you want to skip the orange cups altogether, you can also bake the sweet potato mixture in lightly greased ramekins. But you’ll still need oranges for the juice and the zest. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2hvr9w’]

Oh, and the little bit of brandy the recipe calls for is optional – I really couldn’t taste it (maybe I should’ve added more!) but whether to include it or not is entirely up to you.

Orange-Maple Sweet Potatoes in Orange Cups

Yield: 6 sweet potato-filled orange cups

Orange-Maple Sweet Potatoes in Orange Cups

Ingredients

  • 4 large sweet potatoes
  • 3 large oranges for the cups +1 more orange for zest
  • 1/4 cup melted ghee
  • 1/4 cup pure maple syrup
  • 2 eggs
  • 1/2 cup orange juice (squeezed from fruit removed from the orange cups)
  • 1/2 cup full fat coconut milk
  • 3 tbs brandy (optional)
  • 1 tsp ground cinnamon
  • 1 tsp vanilla
  • 1 tsp orange zest
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 400º F
  2. Place raw sweet potatoes on baking sheet and bake until tender (about 1 hour). Remove and let cool a bit.
  3. Cut the 3 oranges in half and scoop out all fruit and pulp (save to make the recipe's orange juice!)
  4. Place orange shells on cookie sheet
  5. Peel the cooked sweet potatoes and place in large bowl
  6. Add maple syrup, coconut milk and ghee to bowl with potatoes and whip to remove the lumps (electric mixer works best)
  7. Next add eggs, orange juice, brandy and vanilla, then mix again until smooth
  8. Finally add the cinnamon, nutmeg , salt and mix one last time
  9. Spoon the sweet potato mixture into each orange cup on a cookie sheet
  10. Place in oven and bake at 350º F for about 20 minutes or until sweet potato tops are slightly golden
  11. Serve immediately and enjoy!
