Mango Madness Paleo Smoothie

Gulp down this ice-cold glass of mango goodness after a heart-pounding workout or a hot day on the beach, and you’re really going to be loving life!

This super-easy tropical treat is all-paleo. It’s just fresh or frozen mango, coconut milk, a squeeze of orange, a dash of vanilla, and of course ice. It should be sweet enough for you as-is, but if not, just a tablespoon or less of raw honey should do the trick.

This creamy concoction came about when I had leftover mangoes from the Grilled Shrimp & Mango Salad paleo recipe I posted recently (which if you haven’t tried yet, do it soon – I think you’ll really like it!) You better believe this one is refreshing…and so good for you too! You’re drinking up some great nutrients including lots of vitamin C, a good dose of vitamin A, a nice serving of B6 and other B vitamins, plus a couple of dozen carotenoids to keep your immune system humming along. Mangoes are pretty low on the glycemic index too, so no worries about spiking your sugar levels with this drink.

Yield: One Serving

Paleo Mango Madness Smoothie

Ingredients

  • 1/2 cup fresh or frozen mango
  • 1/3 cup full fat coconut milk (or substitute with almond milk)
  • 3 tbs fresh-squeezed orange juice
  • 1/2 tsp pure vanilla extract
  • Honey (optional - depending on the sweetness of your mango)
  • Ice

Instructions

  1. Place ingredients in blender or single-serve mixer
  2. Blend just until creamy
  3. Enjoy!
