I Love Salsa…All Kinds of Salsa

I love mango salsa. Pineapple salsa. Chipotle salsa. Peach salsa. Oh, and a personal fav, salsa music! Have you ever danced the salsa? One word of advice: You can skip the gym workout on said day of dancing.

Salsa dancing works every body part and muscle in your body…including some you never even knew existed. I’ve only done it a couple of times and it can be quite embarrassing if you’re at a club with dancers that salsa like pros. They get all sweaty and strut around like Travolta, only cooler. And they look so fantastic doing it. Why are they all so good looking? It’s like you have to be hot to salsa dance…you know I’m right.

I suggest a light cocktail before engaging in such a dance. It will loosen you up a bit, and if you’re anything like me, help you find the beat. I’m so jealous of great dancers. I watch Dancing With The Stars and think, really? If Kirstie Alley can hoof it, then I should be able to pull it off too. No such luck. I suck at it. And I admit it. I love watching it though. There is such grace in any kind of dance. And isn’t it cool when they bite it? Ha! I know its just wrong to say that out loud but It helps remind me that they’re human and not life-size Gumbies.

So anyway, since I can’t salsa dance, I figured I could make salsa. Here are a couple of my favs. They go with most anything. The Avocado-Tomato Salsa is good with fajitas, tacos, or anything spicy. The Mango-Pineapple Salsa is perfect for pork or seafood.

I also included the recipe for the Paleo Spicy Shrimp Wraps. We made these shrimp wraps with the mango/pineapple salsa last night and it rocked!

Avocado Tomato Paleo Salsa

Ingredients

  • 2 Roma tomatoes- seeded and diced small
  • 1/2 cup diced red onion
  • 1 red or green jalapeno - seeded and diced small
  • 1 or 2 avocados diced
  • 2-3 tbs cilantro - chopped, leaves only
  • juice of 2 limes
  • 1-2 tbs olive oil
  • salt and pepper

Instructions

  1. In a bowl, mix tomatoes, onion and jalapeno
  2. Add avocado, olive oil and lime juice, toss
  3. salt and pepper to taste

Mango/Pineapple crazy good salsa!

This is actually really good if made ahead. If it has the opportunity for flavors to combine, the flavors just burst in your mouth!

Ingredients

  • 1 cup fresh mango - chopped small
  • 1 cup fresh pineapple - chopped small
  • 1 jalapeno - seeded and diced small
  • 1/4 cup red bell pepper - diced small
  • 1/4 cup red onion - diced small
  • 2 limes - juiced
  • 2-3 tbs cilantro chopped- leaves only

Instructions

  1. Super easy!
  2. Combine all of the above ingredients, saving the lime juice for last
  3. Toss in a small bowl
  4. Now eat it up!

Spicy Shrimp Paleo Wraps Recipe

Spicy Shrimp Paleo Wraps Recipe

Ingredients

  • Butter lettuce
  • 1-2 lbs of uncooked shrimp - peeled
  • 2 cloves pressed garlic
  • 1 tbs of sea salt
  • 1 tsp of paprika
  • 1/2 tsp of cayenne
  • 1/4 cup lemon juice
  • Wooden skewers that have been soaked in water for about an hour - or use metal skewers if you prefer

Instructions

  1. Combine the garlic and salt in a medium bowl. Press the salt into the garlic.
  2. Add paprika and cayenne
  3. Pour in lemon juice
  4. Stir together
  5. Throw in the shrimp and toss
  6. Place shrimp on skewers and grill 2-3 minutes per side
  7. Make yourself a lettuce wrap with the butter lettuce.
  8. Add any kind of salsa and sliced avocado.
