Easy Paleo Sweet Potato & Bacon Breakfast Fritters
Hungry for a hearty paleo breakfast and have a little extra time to whip up something special?
Let me introduce you to these golden sweet potato fritters spiked with crunchy bacon – a real paleo treat to satisfy your hungry morning crew.
There’s really nothing hard at all about this bodacious breakfast side. A little potato grating is the only halfway serious prep required. The rest is just a little mixing, and then a quick trip to the skillet.
My only tip for this one is to avoid crowding your frying pan. Cook these in small batches – three fritters at a time will probably work best for you. That will leave you enough room to get your spatula in there and give them a flip without running into problems. Cook these around three minutes per side, or until the potatoes are tender and have a nice golden crust.
Serve with eggs any style and enjoy!

Directions
1Fry bacon pieces, stirring to cook. Remove with slotted spoon and set on paper towels to drain. Leave bacon fat in pan
2Peel and grate sweet potatoes. Place the shredded raw sweet potatoes in a medium size mixing bowl
3Add fried bacon pieces, chopped scallions, 2 whisked eggs, 3 Tbsp coconut flour, and salt and peper as desired to the bowl. Mix everything together well to combine
4To form the fritters, first scoop up the mixture using a 1/4-cup measuring cup for each fritter. Next place each scoop on some parchment paper, and gently flatten with spatula until each fritter is about 3/4" in thickness
5Add about 1/4 cup of olive oil to the skillet with the remaining bacon fat to form a shallow layer of oil that covers the entire bottom of the pan. Heat skillet to Medium-Low
6Cook only 3-4 fritters at a time in the heated skillet. Cook each about 3 minutes per side, or until potatoes have cooked through and they develop a slight golden-brown color. Remove fritters and set on paper towel drain.
7Serve warm with fried or scrambled eggs. Enjoy!
