Cranberry-Pecan Paleo Chicken Salad To-Go

When you’re rushing around and need to create a paleo meal on the fly, this quick and easy chicken salad is the one to try!

This one’s real simple. To start, you just need some shredded chicken (mine was from a leftover rotisserie chicken).

Then add a few things you probably have in your cupboard right now – dried cranberries and some chopped pecans.

Next chop up some fresh green onions and a celery stalk.

And finally, mix it all together with a dash or two of salt and pepper, a squeeze of lime, and some paleo-approved mayo – I grabbed my cold jar of Primal Kitchen Avocado Oil Mayo (check it out, you’ll love it!) And just like that, your easy paleo lunch is ready to fly out the door.

Since I meal prepped this lunch right in the bento box the night before, it stayed chilled in the fridge until I was ready to head out. I just slipped it into the insulated bag in the morning, and off I went. Lunch was still nice and cool by noon – and let me tell you, it was quite the conversation piece in our lunch room!

This would be a great way to pack a lunch for your school-aged kiddos too. (It keeps the different foods from touching – yes I was one of the kids!) Oh, just a final word on the paleo chicken salad – feel free to jazz it up however you like! I really loved the tart cranberries and crunchy pecan combo you’ll see in this paleo recipe. But you could also add apples or grapes to really jazz it up.

 2.50 cups cooked chicken, shredded
 0.33 cup (or more to taste) paleo mayo (I used the Primal Kitchen brand)
 0.25 cup cranberries, dried
