Fresh & Savory Brussels Sprouts Salad with Lemon Vinaigrette

easy paleo recipe for brussels sprouts salad with lemon vinaigrette

 1/2 pound Brussels sprouts, trimmed and sliced thin
 1 head of Romaine lettuce, chopped
 1/2 cup dried cranberries
 1/2 cup slivered almonds
 2-3 strips of cooked and chopped bacon
Lemon Vinaigrette
 1 clove garlic, minced
 3 Tbsp red wine vinegar
 1 Tbsp lemon juice
 1/3 cup olive oil
 1 Tbsp Dijon mustard
 Salt & pepper, to taste

Make the lemon vinaigrette first...just add all the ingredients to a medium mixing bowl and whisk vigorously until combined. Set aside

With a sharp knife, slice the Brussels sprouts lengthwise into thin slices

Place sliced sprouts in a large salad mixing bowl and drizzle about half the vinaigrette over. Let stand to soak up the vinaigrette while making the bacon

Cook 2-3 strips of bacon. Chop and set aside

Chop 1 head of Romaine lettuce and add to mixing bowl with the sprouts

Next add the almonds and cranberries to the bowl

Toss to mix everything together

Top with bacon and serve with remaining vinaigrette
